I don't know if every castle had a unique layout or not but there was definitely variety and Castles certainly kept their layout so it wasnt random. Finally the staircases at the top of the keep where you are holding enemies off with what few men you have left hoping that the enemy runs out of reinforcements before your remaining men are dropped by the lucky suicidal charge or gunshot.

If your numbers start dropping you can fall back to the keep where again another chokepoint where archers have windows for days to fire out at enemies as they run through the death maze to get to the front door. Its still Warband gameplay without changes there but the way they do Japanese castles makes it so that you actually can hold enemies at the gates which are purpose built for letting your archers and spearmen rain hell upon them as they approach.
